While there isn't a feature designed to reveal the category name on an invoice, there is a potential workaround that I have in mind.
You could add an 'HTML output' custom booking form field with the content as the category name and in the 'options' ensure it is shown on the invoice. Next, make sure it only applies to the category name in the 'apply to' section of the 'advanced' tab.
